Caramel Apple Cookie Cups

The individual pieces of this recipe might not be anything Earth shatteringly new, but they are some of my favorite flavors put together in a fun way that is easy to do - even when you are bad at owning and cleaning dishes like me. Little cups made out of sugar cookies, holding a caramel apple filling topped off with either whipped cream or vanilla ice cream. Just gained a few pounds thinking about it.

Materials: What do I need at the grocery store?
Not a whole heck of a lot.

  • Muffin tin with cupcake wrappers
  • Apples
  • 1 cup brown sugar
  • Cinnamon (and nutmeg if you got it)
  • 2 cups flour (all-purpose or white will do)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter (about half for apples, half for cookies. The recipe I use says unsalted, but whatever. Regular works fine - just use a little less salt)
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Either whipped cream or vanilla ice cream.

Make some sugar cookies!

Try not to eat too much of the dough. I like to follow Martha Stewart's recipe for this. But the point is - make some sugar cookie dough. Then, line your muffin tin with cupcake wrappers and use your thumbs to line those with cookie dough making little cupcake shaped cups of deliciousness. Then bake at 350 as Martha says. Don't worry, they won't expand too much. Then, while that is happening...

Make your caramel apples!

Peel about 4 apples and chop them up into cubes about 2cm square, or half an inch. It doesn't matter too much - this part doesn't need to be exact, just make them roughly the same size.
Melt about 1/2 cup butter in a sauce pan and stir in about a cup of brown sugar. Stir in the apples and top with about a teaspoon of cinnamon and a half teaspoon of nutmeg if you have it.
Stir over medium heat until it melts down into a sticky, tasty, simmering glob of yum. About 10 min. Don't boil it too hard.
By this time, your cookie cups should be about ready. Take them out of the oven, pour in your caramel apple mixture, and when you're ready to serve, top with either whipped cream or vanilla ice cream.
